      <description>&lt;div&gt;Shaman Chocolates.  Sweet mother - what an amazingly complex flavor!  I'm so hooked, though I keep trying to ration myself to one or two sections a day.  The dark is only 60% cacao, but it's gooooood.  And it's all fair trade and organic and stuff, which is also nice.

      <description>&lt;div&gt;So I saw these bars at Whole Foods tonight and hey - who am I to pass up untried chocolate?  I picked up a bar of 70% and found it sort of...well...lacking.  The texture was good, it was nice and firm/brittle, but honestly pretty bland.  None of that great tang and fruit/floral blooming that happens when dark melts in your mouth.  More earthy, I guess.  Way less sweet than I think I'm used to, not that that matters especially.  
&lt;br/&gt;
&lt;br/&gt;But, so...am I missing the point?  Anyone who loves this stuff want to extoll its virtues and give me something to think about as I sort of half-heartedly consume the rest of the bar (cuz it IS dark chocolate after all)?&lt;/div&gt;

      <description>&lt;div&gt;Picked up one of those Pound Plus bars, and I felt a bit nervous from the price alone, but many of their products are excellent and also inexpensive... whoops. I have been told I shouldn't go into so much detail when ranting about how bad something is, so: "This stuff is crappy." It's basically Hershey's Dark, but less sweet and a chalky texture.
&lt;br/&gt;
&lt;br/&gt;As I type this, I'm nibbling on blocks of:
&lt;br/&gt;
&lt;br/&gt;El Rey Gran Saman 70%
&lt;br/&gt;Scharffen Berger 62%
&lt;br/&gt;Valrhona Guanaja 70%
&lt;br/&gt;
&lt;br/&gt;My guess is anyone that would like the TJ one, wouldn't like these 3. Completely different substances. I don't care that those nine letters are the same. (OK so expecting a $3.50 / lb chocolate to be in the same league as $16.00 / lb chocolate, that was my mistake. Duh.)&lt;/div&gt;

&lt;br/&gt;Has anyone tried the new Hershey's dark chocolate? It's really quite good. The sell it in tiny bars in 5 1/2 ounce bags with purple foil/artwork. I usually have NOTHING to do with Hershey, but this stuff is good. 60% cacao.

&lt;br/&gt;DON'T CHEAT BY SCROLLING DOWN FIRST!
&lt;br/&gt;It takes less than a minute
&lt;br/&gt;Work this out as you read ...
&lt;br/&gt;Be sure you don't read the bottom until you've worked it out!
&lt;br/&gt;This is not one of those waste of time things, it's fun.
&lt;br/&gt;
&lt;br/&gt;1. First of all, pick the number of times a week that! you would like to
&lt;br/&gt;have chocolate
&lt;br/&gt;(more than once but less than 10)
&lt;br/&gt;
&lt;br/&gt;2. Multiply this number by 2 (just to be bold)
&lt;br/&gt;
&lt;br/&gt;3. Add 5
&lt;br/&gt;
&lt;br/&gt;4. Multiply it by 50 -- I'll wait while you get the calculator.
&lt;br/&gt;
&lt;br/&gt;5. If you have already had your birthday this year add 1756 ....
&lt;br/&gt;If you haven't, add 1755.
&lt;br/&gt;
&lt;br/&gt;6. Now subtract the four digit year that you were born.
&lt;br/&gt;
&lt;br/&gt;You should have a three digit number.
&lt;br/&gt;
&lt;br/&gt;The first digit of this was your original number
&lt;br/&gt;(i.e., how many times you want to have chocolate each week).
&lt;br/&gt;
&lt;br/&gt;The next two numbers are
&lt;br/&gt;YOUR AGE! (Oh YES, it is!!!!!)
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;THIS IS THE ONLY YEAR (2006) IT WILL EVER WORK, SO SPREAD IT AROUND WHILE IT

      <title>Chocolate Girl Fight</title>

      <description>&lt;div&gt;I recently learned that there was a back story explaining the overwhelming amount of dark chocolate that landed in my lap for Christmas.
&lt;br/&gt;
&lt;br/&gt;I have two very important women in my life; one is my closest friend, Michelle, the other is my girlfriend, Carol.  Seems that there was a conversation between the two before Christmas as to what the other was giving to me.  Carol was stunned as to the sheer genius of Michelle's gift plan.  So, Carol, being newer in my life than Michelle, altered her gifting to include an embarrassing amount of dark chocolate and truffles including Green &amp;amp; Blacks bars along with a black pearl necklace and a beautiful retrospective book of the work of Charles and Ray Eames.  Very sweet and loving.
&lt;br/&gt;
&lt;br/&gt;This past Monday I called Michelle and simply said, "you won".
&lt;br/&gt;
&lt;br/&gt;Her gift?  Two dozen Godiva dark bars and two tickets to a Motley Crue concert.
&lt;br/&gt;Saw the Crue this past Saturday night with my favorite-est human, my brother Al.
&lt;br/&gt;Finally saw Tommy Lee live!!  
&lt;br/&gt;
&lt;br/&gt;Decadance always wins!  Rock and chocolate!!&lt;/div&gt;

      <description>&lt;div&gt;Yesterday I made some chili chocolate drops from 70% bittersweet and some ground toasted pasilla and arbol chili along with a little cinammon.  I'm no candy maker, but I had the chocolate and the spices, so I figured what the hell.  They came out really good.  I urge everyone to try their hand and not be scared.

&lt;br/&gt;1 - Make a 2-4 cups pot of your favorite coffee
&lt;br/&gt;2 - In pot on stove, make old fashioned hot cocoa
&lt;br/&gt;      a.  Heat up 2-4 cups Vanilla Soy Milk
&lt;br/&gt;      b.  Mix in Green and Black's Organic Hot Chocolate mix
&lt;br/&gt;      c.  At boiling  point, mix in a swirl of organic honey and a dash of allspice
&lt;br/&gt;      d. Stir in thoroughly
&lt;br/&gt;3 - In mugs, mix 1/2 coffee with 1/2 hot chocolate
&lt;br/&gt;4 - Top off with whipped cream (dairy or non-dairy)
&lt;br/&gt;5 - Top off whipped cream with topping of your choice (I use allspice)
&lt;br/&gt;
&lt;br/&gt;NOTE: Serves 4-8 people.

      <title>Dark chocolate - no trace nuts</title>

      <description>&lt;div&gt;Here's a stumper - does anyone know of good dark chocolate with no trace tree nuts.  Yep I'm usually screwed on the fine chocolate front due to this pesky "oh my gawd it will kill me" allergy thing.  Sigh.  Peanuts are no problem, but things like hazlenut, almond, pecan etc will kill me (not exagerating here).  So Godiva is out. Ghiradelli is out.  You see where this is going.  So far I have M&amp;amp;M Dark (when they have them - not exactly fine chocolate but at least tasty) and Santander Columbian (when I can find it).  Vermont Nut Free is good kid candy but not fine chocolate. Anyone know any others?

      <title>Raw Chocolate Drink</title>

      <description>&lt;div&gt;Dose any one know how to properly make chocolate milk or hot cocoa from the raw cacao bean?
&lt;br/&gt;
&lt;br/&gt;I just got done drinking some home made chocolate milk that I made by grinding up raw cacao beans, simmering in water, and mixing it with a cup of condensed, water added powdered milk.   I added about three tablespoons of Sugar in the Raw to sweeten it.   How long dose one simmer the ground cacao beans?  Dose one boil the water first, then add the ground beans, then reduce to a simmer; or dose one add the ground beans to water, bring to a boil and then simmer?
&lt;br/&gt;
&lt;br/&gt; I have to admit, even if I did ill-prepare the chocolate, it still came out really good!
&lt;br/&gt;
&lt;br/&gt;I have a Hennery’s, a Bonney's, and a Trader Joe's in my area that are all natural food stores where I can find raw cacao beans.  The beans they sell seem to be all ready roasted.  When pealing off the chaff, the bean itself looks like a hard chocolate coated raisin.&lt;/div&gt;

      <title>Found a glorious chocolate cookbook</title>

      <description>&lt;div&gt;It's called "pure chocolate" and it's by Fran Bigelow of Fran's Chocolates.
&lt;br/&gt;
&lt;br/&gt;The recipes in the book call for mostly dark chocolate, with chapters on tortes, sauces, truffles, and tarts, among other things.  There are lots of photos so you'll know what your creation should look like when you're done.  :)  The recipe that caught my eye in the bookstore is for "deepest, darkest chocolate sauce".  
&lt;br/&gt;
&lt;br/&gt;The book has a great introductory chapter called "everything you need to know about chocolate" and describes what to look for when buying chocolate, different types of chocolate, how to work with it, equipment, etc.

      <description>&lt;div&gt;Mmmm... When the foil is peeled away, a faint sweetness escapes on the air. When bitten, for a moment there is almost nothing - like you can only taste what's on the cloud of sweetness around you. Your teeth sink in a few times, it's actually a little chalky, as if chewing roasted cocoa beans straight. But then, as the warmth of your mouth and salivation gently softens and moistens your morsel, the flavors grow. You have to give a little before you get. Keep playing with it in your mouth - you and the chocolate permeate each other. The flavors build to avalanch proportions (if you let them - take it slow) until climax when the endorphines wash through your entire body. Then the intensity trails away like a gentle breeze, leaving a fine sediment to remind you - like the faint lingering scent that follows you all day long evoking images of your morning lover.&lt;/div&gt;

      <description>&lt;div&gt;So there's dark chocolate that's relatively cheap and then there's REALLY expensive one.
&lt;br/&gt;Sure the more expensive chocolate is supposed to be super-good.
&lt;br/&gt;
&lt;br/&gt;But then...
&lt;br/&gt;
&lt;br/&gt;Sometimes I eat chocolate like bread. Because I am hungry, not because I want to sit there and concentrate on the exquisite flavour of the cocoa, if you know what I mean.
&lt;br/&gt;Like there is cheaper wine for every day's lunch and expensive wine for special occasions.
&lt;br/&gt;
&lt;br/&gt;How about you? Are you only into the absolute high-end chocolate or do you choose your chocolate according to the occasion?
